Description: Like a European chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The blade is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
Built around a resilient SLD semi-stainless steel core, the Hikari line combines traditional craftsmanship with everyday practicality. SLD steel offers excellent edge retention and greater rust resistance than most tool steels, but we recommend hand washing and drying the blade after use to avoid rust and oxidation. SLD holds an edge nearly as long as carbon steel knives, while being semi-stainless and easy to sharpen. Regular honing or occasional stropping will keep it sharp and performing at its best. Stainless cladding on the sides protects and cushions the core steel.
The blade features a satin (migaki) finish. An ambidextrous convex grind provides effortless food release while chopping and slicing. The thin (laser) blade effortlessly slices through foods with virtually no drag. The blade is impressively lightweight, making it comfortable, even after hours of use.
The octagonal "Wa" style handle is ambidextrous. The natural walnut wood handle culminates in a black buffalo horn ferrule. Like other kitchen knives, this knife should not be put in a dishwasher.
