This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade is hand forged AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. The blade combines a brut de forge finish with a meticulous hand rubbed satin finish.
The ambidextrous Japanese-inspired handle is a style called a half-round. The faceted top is matched with a rounded base for comfort. The handle combines stabilized claro walnut with a stabilized holly wood ferrule. The combination of light and dark woods is particularly dramatic. The handle is brought to a meticulous high polished luster. Like other knives, this knife should not be put in the dishwasher.
