Description: The nakiri usuba is a traditional Japanese knife form ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. With plenty of finger clearance over a cutting board, this nakiri is a great choice to grab as a primary slicing and chopping knife in the kitchen.
Ohishi Ginsan chef's knives feature a high performance blade. The use of Ginsan steel brings an essential innovation to blacksmithing of knives by combining the qualities of high end steels with the rust resistance of stainless steels. Ginsan is sharp like shirogami, yet easy to maintain. The Ginsan stain resistant core is surrounded by softer low carbon stainless steel. This is a great choice for a home chef who wants high performance, easier care, or a professional chef that works in a high volume kitchen. It is hardened to Hrc 61 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to sharpen. A convex grind (hamiguri-ba) and forge finished flats (nashiji) assist food to release from the side of the knife. The ambidextrous blade features a 50/50 grind.
A stainless steel bolster seals the front of the handle. The triple riveted tang runs the full length of the handle for strength and longevity. The nicely rounded, comfortable handle is made from resin impregnated hardwood. This 'pakka wood' combines the best attributes of natural wood and resin -- and easily meets the rigorous demands of a home or commercial kitchen.
