Description: The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is suited to preparation of meat and may be used as a general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance just right. Whether slicing onions, chopping vegetables, or portioning meats, this gyuto handmade by Ben Tendick is a perfect go-to knife in the kitchen.
This elegant Japanese-inspired chef's knife is Ben's sole authorship work. The blade was ground to shape from CPM-3V carbon steel. The resulting blade will have a keen, long lasting edge with tremendous strength and durability. CPM-3V provides maximum resistance to breakage and chipping in a high wear-resistant steel. The blade is beautifully thin with a high grind and a hammer finished spine (tsuchime). This technique allows for effortless, accurate slicing with excellent food release. Both the spine and curved choil are rounded for a comfortable grip.
The ambidextrous handle combines a vintage black Micarta ferrule with exhibition grade Tasmanian blackwood (Acacia melanoxylon). This close relative to koa has a beautiful curl with tremendous chatoyancy. The handle on this chef's knife is a nice large size and will be very comfortable for extended use.
This knife is forged from carbon steel and like other knives, it should not be put in the dishwasher. We recommend using camellia oil to protect the blade from rusting and the handle from drying out. This knife is sure to become your 'goto' knife and a family heirloom.
