Handiest superb cutting around (11/13/2013)
The Mioroshi is one of the few single bevel knives. the others are deba, yanagiba, usuba, and a few minor ones. To me, all offer a smoother slice than the double-bevelled knives. But the deba is too thick. The mioroshi is just right. This one from Tadafusa is right size for home kitchen. It does the chef's knife tasks while also providing amazingly smooth, thin slices. Only the usuba can top it, but usubas are too delicate and wrong shape for general usage. This knife is a superbly handy and capable tool for almost everything in the home kitchen, while adding the unbeatable single bevel advantages of traditional Japanese knives.
