Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this nimble knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with just enough finger clearance over a cutting board.
The 8-1/2 inch blade is made from high performing 1090 carbon steel. The blade was acid etched and then satin finished. 1090 carbon steel will have exceptional edge retention and chip resistance. The blade tapers to a thin, keen cutting edge. The spine is nicely rounded for a comfortable grip. Because this kitchen knife is made from carbon steels, it should be dried and oiled after use to avoid rust and oxidation.
The Japanese-inspired Wa style handle is formed from stabilized and dyed maple burl. The ambidextrous handle provides a comfortable grip and keeps the knife extremely lightweight (only 6.6 oz!). Alternating bronze and yellow G10 spacers at the front of the handle assist the natural wood adjust to humidity and temperature changes in the kitchen. Like other knives, this knife should not be put in the dishwasher.
