This utility knife is ideal for slicing fruit and vegetables, meats, fish and other detail tasks. You can use this knife in your hand rather than against a cutting board for paring tasks or it can also be used for chopping small foods, such as garlic cloves or ginger because of its taller height. When accurate cuts are needed, you will find yourself constantly reaching for this kitchen utility.
The damascus blade was hand forged from 1095 carbon steel and Cummins diesel valve springs. The bold damascus pattern is extremely engaging. Tuthill nicely rounded the spine for comfort. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The half octagonal handle is inspired by traditional Japanese knives. It was formed from dyed and stabilized big leaf maple. The ambidextrous handle is faceted at the top and rounded at the base, resulting in a comfortable, ambidextrous, elegant shape that is pleasing to the eye and hand. The handle affords ergonomic control and comfort -- even when used for many hours. This traditional Japanese shape, while being different from Western handles quickly becomes a favorite. The ferrule is made from ipe wood. Ipe (Handroanthus spp.) wood is extremely dense and durable, making it perfect for the harsh demands of a professional or home kitchen. The handle is finished with a brass spacer surrounded by a black and red spacer.
