This high performance chef's knife is a perfect choice as a primary knife in the kitchen. At 5-1/3 inches, it is long enough to get most any task done, yet nimble enough to be easy to control. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chop with just enough finger clearance over a cutting board.
The 5-1/3 inch blade is forged from David's own phoenix feather pattern damascus combining 1085, 1080, and 15n20 carbon steels to ensure excellent edge holding and chip resistance. The blade is high contrast and extremely engaging. The complex pattern is one of the most dramatic feather variations I have ever encountered. The spine and choil are rounded for a comfortable grip. David's touchmark is on the right side of the blade.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith. The front of the bolster is nicely curved to encourage a comfortable pinch grip.
The contoured handle is African blackwood (Dalbergia melanoxylon). African blackwood is among the most dense, durable woods in the world and is highly prized for its jet black appearance. Alternating black G10 and bonze spacers finish the handle. Like other knives, this knife should not be put in the dishwasher.
