Description: Russell Dodd is a knifemaker from Boise, Idaho focusing on making folders, hunters, and chef's knives. He is currently serving as president of the Idaho Knife Association. In his spare time, he is a champion bird hunter who has trained many award winning bird dogs. Being an avid outdoorsman, he understands what is required to make a good knife. He has taken many classes with renowned Mastersmith Bill Burke. Due to this, his understanding of heat treatment techniques is exceptional.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade is hand forged 52100 carbon steel. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. Dodd's touchmark is on the left side of the blade. Because the blade is forged from carbon steel, recommend using camellia oil to prevent rust.
Handle scales are black Micarta, set on a full tang using two pins. Micarta holds up well to the high demands of a home or professional kitchen and does not become slippery when wet. The scales are dovetailed to polished stainless steel bolsters that are carved to comfortably accommodate a pinch grip. Red fiber liners contrast elegantly against the jet black scales. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
