Description: This knife design is traditionally used for boning fish and poultry. This knife has excellent balance and a secure, comfortable grip which gives increased control.
By creating an ultra hard core (63-64 Rc), and forge-welding wrought iron to the side, Iizuka creates a knife that will maintain its edge much longer than a European made knife. The magnolia wood, which is traditional for Japanese chef knives, is excellent for use in the kitchen because it holds up well, even when wet.
