Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. Recently, he put his attention to creating chef's knives. The results are exceptional.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The European Chef's knife (known as a gyuto in Japan) is well suited for use as a general purpose chef's knife -- from chopping, to slicing and dicing. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right.
The blade has been antiqued using Wayne Goddard's "mustard" protective finish. This attractive finish helps prevent rust and makes the knife easy to maintain. The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from Hawaiian curly koa wood and has curly maple accents. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. The knife has perfect balance and feels exceptional in the hand.
