Misono's Swedish Carbon Steel line is hand forged and hand sharpened to maintain a long-lasting, super-keen edge. Because these knives are forged from carbon steel, they must be dried and oiled after use to prevent rust and oxidation. We recommend using camellia oil to protect the blade. The blade is tempered to Rc60 and will hold its edge considerably longer than most stainless and carbon steel Western-made knives.
The Pakkawood handles are made by compressing thin slices of wood which have been pressure treated with resin. This process results in a handle that is impervious to water and will hold up well to the demanding environment of both home and commercial kitchens. For strength, the handles are riveted to the full length tang. Each blade comes razor sharp. These knives are attractive, well balanced, and easy to sharpen. This knife is designed for right-handed use.
