Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. When he puts his attention to creating chef's knives, the results are exceptional.
The santoku is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper. The santoku has quickly become the new favorite for chefs in the West.
The blade and bolster are formed from 52100 carbon steel. Many knifemakers and collectors feel that this steel is among the best steels currently used for knives due to its exceptional edge holding and sharpness. The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly.
The blade was heat treated using a traditional Japanese technique whereby the spine was coated in clay prior to quenching. This results in a soft, supportive spine and a hard, long lasting edge. The gently undulating transition line between the soft spine and the hard edge is called a hamon. A triple quench results in truly exceptional edge holding.!
The detailed wood handle is formed from maple burl and curly koa with curly maple accents. By using stabilized woods, Michael is able to combine the beauty of natural wood with durability. This handle is particularly complex and shows Michael's woodworking skills at its best. Alternating copper and G10 spacers highlight warm tones in the natural wood. The knife has perfect balance and feels exceptional in the hand.
