Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is above and beyond other knives.
Paring knives are a great choice for detail tasks such as slicing garlic, taking the eyes out of potatoes and the heads off strawberries. It is one of the most important knives in the kitchen, second only to your all-purpose chef's knife or santoku.
Like Bill's hunting knives, this 3-1/2 inch parer was pre-tested for edge flex and cutting ability before assembly. A particularly small grain structure (meaning the blade takes a truly exceptional edge) is created by a heat treatment process incorporating low temperature forging, a triple quench, and a triple temper.
The handle is formed from extremely rare high Arctic musk ox horn. Musk ox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished musk ox has a unique grain structure that immediately grabs the eye. The handle scales are carved to nestle in the hand, with full tang construction for strength and durability. The perfect balance makes this little parer a joy to use. Excellent fit and finish throughout!
