Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a 13-1/2 inch chef's knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long blade is well suited for slicing and chopping vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
Like his hunting knives, this large chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment follows the formula developed by Bill Burke in conjunction with Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
A differential heat treatment is clearly visible in the differential hardness line approximately two thirds up the blade. This results in a soft, supportive spine and an extremely hard, long lasting edge. The bolster is formed from 416 stainless steel and has been TIG welded to the blade for strength and durability. The warm toned handle is formed from Brazilian rosewood and is set with nickel silver pins. Despite being so large, this knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
