Description: Bread knives are serrated for easy slicing through loaves of bread. They are also great for slicing pastries, tomatoes, and roasts. The Shun Reserve bread knife has a 9" reverse scalloped blade with wonderfully sharp teeth. This long, slender knife can slice baguettes, hard sausage and cheeses, tomatoes and other tasks. By using a reverse scallop, Shun ensures a cleaner, smooth slice than a traditional European serration.
Shun Reserve knives feature a blade made from SG2 (Super Gold ultra-premium "micro carbide" powder steel). This steel is considered by many knife users and makes to be the best steel currently available to make knives. It results in an extremely high performance knife with a keen, long lasting edge. The SG2 core is surrounded by 32 layers of stainless/nickel ladder-pattern Damascus. This is not only gorgeous, but also assists food to release from the side of the knife while chopping. The thin blades are sharpened to a 16 degree angle for an incredibly sharp and high-performance knife. The blade is tempered to 64 Hrc (very hard) for exceptional edge holding.
The Shun reserve feels "Rock Solid" in your hand due to its sturdy blade combined with full tang construction and riveted handle. The dark PakkaWood handle with burgundy striations is a mix of East meets West: an elegant, ergonomic and comfortable Western-style handle is combined with Japanese touches like the inlaid mosaic pin.
