Description: The gyuto is the essential kitchen knife. It's used for all the same purposes as a chef's knife—all-around food preparation, but the gyuto has less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The Shigeki Nashiji Gyuto has a gentle roll off the tip compared to the large roll of a Western style knife, so it needs to be lifted less, making cutting more efficient. Once you try the this knife, you'll wonder what you ever did without it.
This damascus chef's knife is hand forged by 4th generation blacksmith Shigeki Tanaka. For more than 100 years, the Tanaka family has been noted for their fine quality farming tools. Due to declining demand for farm tools, the family began making cutlery. To increase their techniques, they apprenticed their youngest son, Shigeki, to a famous Takefu knife maker. Over the years, Shigeki-san has become noted for the quality of his chef's knives.
The blade is forged from premium Takefu VG10 stainless steel, known for its exceptional edge holding. The center core is forged between two layers of low carbon stainless steel. The surface is forge finished (nashiji finish). This, along with a convex grind ensures that food does not stick to the sides of the knife while slicing.
The ambidextrous Western handle is formed from resilient black pakkawood.
This knife is razor sharp and sent in a nice gift box.
