Great knives!

I bought the 210mm gyuto, 150mm petty and 95mm petty about a year ago and they are great knives! So far, just using a steel once in a while and they are still razor sharp. Effortless cutting, minimal maintenance (I hand wash & dry right away and there is a little patina on the tool steel portion of the blade). I don't know how anyone uses inferior knives...

My first impression before using the knife was that I maybe should have bought a longer knife. After using it, I have no doubt in my mind that I bought the right knife. I found that with the light weight and sharp edge it was so precise and accurate that I could do more in a smaller area. I may get a longer one in future (just because every man wants a big sword!), but I am very satisfied with my purchase.

Absolutely outstanding knife. You could spend a lot more, but there is no need. Edge is razor sharp and holds up to heavy use. Touches up easily on a good ceramic crock stick. The handle is very well done, and the D-shape is very comfortable. Mr Y does a GREAT knife. Buy it, you won't be sorry.

yoshikane hammer finish gyuto

Just recieved my yoshikane hammer finished gyuto. Got it as a gift for a good friend who enjoys cooking. I was quite impressed with the fit & finish, also like the stain resistant qualities which will be good for my friend who isn't experienced with the necessary maintainance of high carbon steel knives. Will probablly order one for myself considering the quality of this knife for the price.

I have both the 180mm and 210mm Gyutos in my block and just love them. I use the 180mm as an all-around utility knife but this 210mm is a do-evertything knife. The hammer finish is beautiful and the Ho D handle has become my favorite -- I feel more precise and in control, they're warm to the touch and offer a very good/comfortable grip, but what's most stunning about the knives is their performance, very, very sharp and hold the edge very well. The slightly forward balance for me is just perfect. I can feel everything I'm doing with these knives. They do an excellent job all the way from the tip to the back of the blade.
