Description: Mark Mostert is an exceptional bladesmtih from South Africa. He started making knives part time in 2019 and presented his work for the first time at the 2020 Brooklyn Knife Show in Pretoria, South Africa. From the start, damascus caught his eye and he began a never-ending quest for information surrounding damascus and forging. As time went by, he started experimenting and is one of a very small group of bladesmiths in the world capable of making copper san mai. Mostert brings skills that are far beyond the limited number of years that he has been forging. His work is currently significantly underpriced and I look forward to him gaining a much larger international reputation.
This chef's knife shows Mostert's work at its best. Chef's knives are the general purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. The 8" blade is the most popular size for general purpose use in the kitchen and this is sure to become your goto knife.
Mostert began by forging the san mai blade. An 80CrV2 carbon steel core is surrounded by a copper layer, followed by damascus comprised of many layers of 1070 and 15N20 carbon steels. The combination of the dark center core steel with the bright copper and damascus sides is particularly dramatic. 80CrV2 ensures a truly exceptionally keen, long lasting edge. The convex ground blade features a fuller. Together, this geometry ensures exceptional cutting with great food release. The choil and spine are nicely rounded for a comfortable, secure grip across hours of use.
The Western style handle is presentation grade Arizona desert ironwood, set on a full tang. This dense wood holds up beautifully to the demands of either a home or commercial kitchen. An antiqued bronze bolster and pins complete the handle. Because the blade is forged from carbon steels and copper, we recommend using camellia oil to avoid rust and oxidation. Like other knives, this chef's knife should not be put in the dishwasher.
