This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is perfect for chopping and slicing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 8 inches, this is among the most popular sizes for a professional and home chef's knife. It is large enough to get most any task done, yet nimble enough to be easily maneuvered.
The blade is hand forged 52100 carbon steel with a hand rubbed satin finish. Many knifemakers (such as Mastersmiths Bob Kramer, Bill Burke, and Ed Fowler) and users feel that 52100 carbon steel is among the highest performing steels used to make modern knives. Both the blade and tang are distal tapered for perfect balance. Reed's touchmark is on the right side of the blade.
Stabilized oak handle scales reclaimed from a barn in Sunderland, Massachusetts are set on the tapered full tang using brass pins. The sculpted handle is comfortable in both a pinch grip and a full handle grip. Like other knives, this knife should not go in the dishwasher.
