Description: Shigefusa's knives are among the most desired knives found anywhere, as attested to by his long waiting list. A spectacular feel in the hand, this Japanese chef's knife will soon become among the only knives that you use in the kitchen. The santoku is the traditional Japanese chefs knife. This comfortable design is a fantastic multipurpose chopper. The santoku style has quickly become the new favorite for chefs in the West. Perfect balance and a razor sharp edge.
By creating an ultra hard core (63-64 Rc), and forge-welding softer Damascus to the sides, Shigefusa creates a knife that will maintain its edge much longer than a European-made knife.
The octagonal handle was made by Bladesmith Daniel O'Malley. Exhibition grade spalted maple has a convoluted, swirling grain pattern that nicely compliments Shigefusa's suminagashi. A nickel silver spacer separates the wood from a buffalo horn ferrule. A central nickel silver pin secures the handle to the tang for exceptionally durable construction. By using stabilized woods, O'Malley assures the handle will hold up well to the heavy demands of both home and commercial kitchens. This is a chef's dream.
